Taiwanese Three-cup Chicken (三杯雞)

Taiwanese Three-cup Chicken

Also known as Chicken with wine, soy sauce and sesame oil. 
Three cups refer to wine, soy sauce and sesame oil.  Perfect to serve with rice.

Ingredients

10 chicken wings mid-joint
a bunch of Thai Basil (九層塔), chopped
10 gloves garlic, sliced
10 slices ginger

Sauce
3 tbsp dark soy sauce
3 tbsp rice wine (Shaoxing Huadiao 紹興花雕 )
1 tbsp sesame oil
1/2 tbsp rock sugar

Directions

1. Heat some oil in a skillet. Fry the chicken wings briefly, both sides turn light brown,  1-2 minutes.
2. Remove chicken wings.
3. Heat sesame oil. Add garlic and ginger. Stir fry until fragrant and brown.  Add rock sugar and continue to stir fry until sugar melts to turn brown, about 10 seconds.
4. Add chicken wings to the skillet.
5. Add soy sauce.  Stir fry until all chicken wings are coloured.  Add wine.
6. Covered the skillet, continue to braise until the chicken are cooked, for  2-3 minutes.  If sauce becomes too dry, add a little more wine. 
7. Add Thai basil.  Off the flame.  Stir fry to mix.
