"Drunken" Chicken Wings in Wine (醉雞翼)

"Drunken" chicken wings in Shaoxing wine
A famous Chinese cold dish, by soaking the chicken wings in wine. That's why the chicken wings are "drunken". 


Ingredients

10 chicken wings
2 cups Shaoxing wine (紹興花雕)
1/3 fish sauce (魚露)
5 pieces ginger
1 stalk spring onion, cut

Directions

  1. Steam the chicken wings, with ginger and spring onion on top, for 15-20 minutes, until it is fully cooked (Poke with a toothpick, with clear liquid flowing out).
  2. Put cooked chicken wings in iced cold water, to cool down them rapidly.
  3. Use a container with tight cover.  Put in Shaoxing wine, fish sauce and mix well.
  4. Put cold chicken wings to the wine sauce. Make sure all wings are covered by the sauce.  Cover tightly. Soak for at least 4 hours, overnight is better, in refrigerator.
