Chocolate Lava Cake

Chocolate Lava Cake
I am sorry to tell that my first attempt was not a successful one.  To fit my serving time, I had kept the mixture in fridge for a bit longer than necessary.  And I had baked it for 17 minutes.  The outcome was I had overdone the cake.  It became all solid and was not a molten cake at all.  Nonetheless, the taste is perfect as a chocolate cake, with intense choco flavour.  Sure enough, I will need to try it again with better time control.  Our family loves choco lava cake so much, and it is expensive in restaurant.  It would be ideal to make a success for valentine day's celebration.

At last, I had my second attempt last Saturday.  I adjusted the baking time to 13 minutes only with the same temperature (215C, without oven fan). It's success! I made it finally, with the molten interior. The only regret was we forgot to take the photos as we were too eager to eat it!


Ingredients

2 large eggs
2 large egg yolks
5 tablespoon butter
3 tablespoon sugar
3.5 oz dark chocolate (this is one standard chocolate bar)
3 tablespoon flour
4 teaspoon good (aka expensive) cocoa powder
a pinch of salt

1/8 teaspoon vanilla

Directions

1.      Grease 4 baking cups.
2.      Add eggs and sugar.  Whisk until the mixture becomes white and smoothy.  It takes a few minutes.
3.      Put butter and standard dark chocolate bar into a mixing bow.  Break them up into small pieces.
4.      Put into microwave or use a hot water bath to melt the butter and chocolate.  Mix them well.
5.      Add chocolate mixture to egg and sugar.  Mix them well, clockwise and anti-clockwise but not to beat them.
6.      Sift in cocoa powder.
7.      Sift in flour and add vanilla essence.
8.      Mix them well, again clockwise and anti-clockwise, but not to beat them.
9.      Put the mixture in a Ziploc.  Cut the ziploc a small opening and squeeze the mixture into the baking cups. Make sure no bubble is kept inside.
10.  Cover the baking cups with wrap and chill it for 30 minutes.
11.  Preheat oven for 218C.
12.  Add hot water to baking plate.  Bake in hot water bath, for 13 minutes


13.  Turn off the oven.  Cool for 15 minutes.
13.  Take the cake out and add icing sugar on top for decoration.
