Grilled Chicken with Vegetables

Grilled Chicken
Chicken and vegetables...

Ingredients

1 whole chicken (1-1.5 lbs)
3 small onions
3 small potatoes
2 stalks celery
1 red pepper
1 yellow pepper
1/2 carrot

Seasonings
1 tbsp rosemary, dried
1 tbsp oregano, dried
2 bay leaves, dried
2 tbsp olive oil
1 tsp salt
1 tsp black pepper

Directions

  1. Wash the chicken thoroughly. Cut into 4 big pieces.  Dry it with kitchen paper.
  2. Mix the herbs, salt and paper.  Rub the herbs and salt onto the chicken, Massage the chicken with the seasonings to make it absorb into the chicken better. Put it in refrigerator for at least 6 hours.
  3. Preheat the oven to 200C.
  4. Use a big deep baking dish.  Put the marinated chicken.  Add onion, potatoes, celery, peppers, carrots to it, side with the chicken pieces.
  5. Pour olive oil onto the chicken and vegetables.
  6. Bake the chicken for 50 minutes.  If the chicken or vegetables is burnt, cover it with a foil, continue to bake.

Remarks

  1. During baking, the juice, grease from the chicken will comes out, and mix with the vegetables on the baking dish, making the vegetables full of chicken flavour.
