Fish Roll-ups in White Wine Sauce

Fish roll-ups in white wine sauce





Ingredients

8 sole fillets
8 bacon
Salt and pepper

White wine sauce
1/2 cup chicken broth
1/4 cup white wine
1/2 lemon, juiced
1 tablespoon minced shallot
1 clove garlic, minced
1/4 cup butter
1/4 tablespoon olive oil

Directions

1.          Preheat oven to 375F (or 190C).  Lightly grease a 9x13 inch baking pan.
2.          For each sole fillet, put a bacon on its top.  Roll up the fillet, seal with toothpick and place in the baking dish.
3.          Dot each roll with some butter. Sprinkle some salt and pepper on the fish rolls.
4.          Bake in preheated oven for 15-17 minutes until fish flakes.
5.          In a skillet over medium heat, mix the chicken broth, wine, lemon juice, shallot, and garlic.  Cook and stir until most of the liquid has been reduced.  Stir in the butter until melted.
6.          Serve the fish roll-ups with the white wine sauce.
