(for 4 servings)


Ingredients


3 egg whites
1.5 egg yolks
1 tablespoon and 1 teaspoon flour
2 tablespoons and 2 teaspoons sugar
80 ml milk
1/4 vanilla essence


Directions

1.          Preheat the oven to 200C (400F).  Warm the milk. 
2.          Add 1 tablespoon and 1 teaspoon sugar to egg yolk.  Beat until pale yellow. 
3.          Add vanilla essence and mix well.
4.          Add in sifted flour and mix well. 
5.          Add warm milk and leave aside for a moment.
6.          Beat egg white until foamy.  Add 1 tablespoon and 1 teaspoon sugar.  Continue to beat until fluffy and able to stand.
7.          Add the egg yolk, flour mixture to the egg white and mix well.
8.          Pour the mixture into the cups, 80% full at most to leave it space for expansion and rising.
9.          Bake in 200C for 16 minutes.


Remarks
This is my first attempt only - not too bad. It tastes good, although it is a bit too hard. Perhaps it is overdone a bit. Will try to adjust the baking time in my next try.
