Roasted herbed Pork Loin


Ingredients


2 lbs Boneless pork loin roast
1/4 cup olive oil
1/2 cup white wine
3 cloves garlic, minced
1 tablespoon dried rosemary
1 tablespoon thyme
salt and pepper

Directions

  1. Preheat oven to 350F (175C).
  2. Crush garlic.  Mixed garlic, roasemary, salt and pepper.
  3. Pierce pork loin with a sharp knife in several places.  Press the garlic mixture into the openings.
  4. Rub the meat with the remaining garlic mixture and olive oil.
  5. Place the pork loin into oven, turning and basting with pan liquids from time to time.
  6. Bake for around 1 hour, until the pork is no longer pink in centre and pork centre temperature reach 145F (or 63C).  Remove roast to a platter.
  7. Heat the white wine in pan, with the baking pan liquid.  
  8. Serve pork loin with pan juices.
