Sponge Cake

A universal cake base for various desserts...


Ingredients

4 egg yolks
20g sugar

4 egg whites
100g sugar
100g flour
50g melted butter

Directions

1.      Whip egg yolks and 20g sugar until light and fluffy.
2.      Whip egg whites until soft peaks.  Add flour and continuously whip until stiff.
3.      Mix the egg white mixture with egg yolk mixture until well blended. 
4.      Fold in sieved flour and mix until well combined.
5.      Fold in melted butter and mix until well incorporated.
6.      Pour it into 23-cm greased and paper-lined round mould.
7.      Bake at 180C for 25-30 minutes.  Remove the cake immediately when it is done.


Variations

Add 1 1/2 tbsps of cocoa powder into the flour and sieve, to make Chocolate sponge cake.

Add 1 tbsp of coffee emulco into the batter.  Mix until well blended, to make coffee sponge cake.

Pour the batter onto a greased and paper-lined 30x30 shallow pan.  Bake it at 190C on the middle rack of oven for 15 minutes, to make Sponge sheet.
