Baked Pork Chop with Caramelized Onion

Ingredients


4 pieces (around 1.5 lbs) Pork Chop
1/2 cup Plain Flour
2 pieces Onion (cut into strips)
4/5 cup chicken broth
1 tbsp butter
3 tbsp vegetable oil
2 tsp brown sugar
Some black pepper
Some sea salt

Sauce thickening
2 tsp corn starch
2 tbsp water

Directions

1.      Pound both sides of the pork chops with meat hammer.  Season both sides with black pepper and sea salt.
2.      Coat the pork chop with a thin layer of flour.
3.      Briefly fry the pork chop to slight golden.  Put the pork chop onto baking pan lined with a foil.  Cover the pork chop with a foil on top.
4.      Preheat oven to 180C (or 350F).  Bake the pork chop for 30 minutes.
5.      Heat oil in a fry pan.  Add onion.  Stir fry and cook the onion until it becomes soft.  Sprinkle salt and pepper.  Add brown sugar.  Continue to cook the onion until the colour darkens and turns brown.  Add a little water if it becomes too dry.
6.      Put the caramelized onion on top of the pork chop.  Add chicken broth. 
7.      Cover it with foil.  Bake for another 30 minutes to let the pork chop absorb the broth and onion flavour.
8.      When it is ready, put pork chop and onion onto the plate. 
9.      Pour the sauce from baking pan to a small saucepan.  Heat it with slow flame.  Add thickening, continue to cook it until the sauce thickens.  Pour the sauce onto the pork chop and onion.
