| Grilled fish fillets |
4 (6 ounce) fish fillets (sole, halibut, or other)
Marinade

clove garlic, minced

tablespoons fresh lemon juice

tablespoon white wine

tablespoons chopped parsley

wine sauce

cup chicken broth

cup white wine
1/2
lemon, juiced

tablespoons shallot, minced

clove garlic, minced

cup butter
Salt
and pepper to taste
Directions
- Mix garlic, olive oil, basil, salt, pepper, lemon juice, white wine and parsley.
- Place the fish fillets in a shallow glass dish and pour the marinade over the fish. Cover and place in the refrigerator for 1 hour, turning occasionally.
- Bake the fish fillets at 180C for 10 minutes or until the fish is done when easily flaked with a fork.
- Prepare the white wine sauce. In a skillet over medium heat, mix the chicken broth, wine, lemon juice, shallot, and garlic. Cook and stir until most of the liquid has been reduced. Stir in the butter until melted.
